Carb-Wrapped Rotten Banana Recipe (a.k.a. Banana Bread)

So I mentioned in my last post that I'd post my recipe for amazing carb-wrapped rotten bananas, the perfect way to get rid of those sad bananas on your counter. 

Ingredients

9x5 inch loaf pan or 4x mini paper gift pans
1/2 cup butter, softened (save the wrapper for greasing pans)
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup sour cream
1/2 cup chopped walnuts
1 cup mashed banana, preferably more freckled than a ginger


Directions

  1. Grease pan(s) with the butter wrapper and preheat oven to 350 degrees F.
  2. Cream butter and sugar in electric mixer until it forms a nice paste.
  3. Add eggs and vanilla to the mixture and mix until completely incorporated.
  4. In another bowl, combine all remaining dry ingredients except walnuts.
  5. Spoon dry ingredients into butter mixture with mixer running until incorporated.
  6. By hand, fold in sour cream, walnuts, and bananas.
  7. Spread evenly into the pan(s).
  8. Bake for 60 minutes (less for small pans) or until toothpick comes out clean

To make these look healthy and more tempting for the unsuspecting passerby, you can fold in dried cranberries. But you can also just say F it and fold in some dark chocolate chips to go all out.
